3 Ways With Porridge - Quinoa, Barley and Polenta (Vegan & Dairy-Free recipes)
Stuck in a porridge rut? Bored of having oats every morning? Why not try out some different ingredients as the base to jazz things up a bit - all three of these comforting bowls are healthy, wholesome and filling!

Porridge ranks very highly as one of my favourite breakfasts to enjoy during Winter. In fact, I often eat it throughout the year, but there's something extra comforting about wrapping your hands around a steaming bowl of porridge on a cold Winter's morning; it's the food equivalent of a good cuppa when it's freezing outside.

However, porridge can get a little boring, especially if you eat it every day so I like to raid my kitchen cupboard and try out some different ingredients to keep things interesting. The best thing about porridge is how wonderfully customisable it is - from the toppings, to the consistency (just add more or less milk/water to suit your Goldilocks preference), and the actual base ingredients - you never have to get stuck making the same recipe over and over again if you don't want to.

To give you some porridge inspiration, here are three of my favourite ways to make it, all of which are vegan-friendly and dairy-free.

Quinoa is one of the most versatile gluten-free pseudo-grains around, and if you haven't tried it as a porridge yet, this is the perfect recipe for you! It's much lighter and easier to digest than regular oats, and to make it have a creamy consistency, simply pair it with a plant-based milk such as Cashew or Coconut, which also gives it extra flavour. Packed full of protein, B vitamins and minerals, it's a super healthy way to start your day and will keep you full until lunchtime.

Ingredients: (for one)
  • 40g White Quinoa
  • 200ml Water
  • 200ml Cashew or Coconut Milk
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Ground Cinnamon
  • Sprinkle of Pumpkin and Sunflower Seeds (to serve)
  • Drizzle of Agave Syrup (to serve)

Method:
  • Rinse the Quinoa well and then add to a small saucepan with the Milk and Water
  • Bring to the boil, partially cover with a lid and then reduce to a simmer. 
  • Cook for 20-30 minutes until the Quinoa is soft. Add the Vanilla Extract and Cinnamon and give it a good stir.
  • Add a splash more water or milk if desired to get the right consistency, and transfer to a bowl.
  • Sprinkle over the Pumpkin and Sunflower Seeds, and add a generous drizzle of Agave Syrup. Enjoy!

If you don't want to stray too far out of your porridge comfort zone, give Barley Flakes a go instead of your regular oats. They are incredibly similar to oats, yet have a slightly denser, nuttier flavour and a chewier texture, so if you prefer a 'chunkier' type of porridge, like I often do, Barley Flakes are a brilliant alternative. They're full of beneficial fibre and minerals too. I love going all out with this recipe and making the most indulgent porridge ever with gooey sliced Medjool Dates, Cacao Powder to give it a rich chocolate flavour and a plentiful amount of Flaked Coconut on the top - simply heaven in a bowl!

Ingredients: (for one)
  • 40g Barley Flakes
  • 120ml Water
  • 160ml Almond or Soya Milk
  • 1 tsp Cacao Powder
  • 2-3 Medjool Dates (pitted and sliced)
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Vanilla Extract
  • Flaked Coconut (to serve)

Method: 
  • Add the Barley Flakes, Water and Milk to a small saucepan and bring to the boil. Add the Cacao Powder, Dates, Cinnamon and Vanilla Extract and give it a good stir.
  • Reduce to a simmer and cook for 5-10 minutes, depending on how chewy or soft you want the Barley Flakes to be. 
  • Check the consistency, adding more water or milk if desired and then transfer to a bowl.
  • Top with the Flaked Coconut and dig in!

Polenta is rather underrated and overlooked here in the UK, but it's very cheap and filling, plus it's low-fat and provides a source of protein and fibre, so it's a good base ingredient to use if you want to lose some weight. Add some Cardamon for a delicious twist, a splash of Maple Syrup for sweetness and Sesame Seeds bring some additional nutrients and nutty flavour. Ready in just three minutes, it's perfect for busy morning people so there's no excuse to skip breakfast.

Ingredients: (for one)
  • 40g Polenta
  • 110ml Water
  • 110ml Rice, Almond or Soya Milk
  • 1/2 tsp Ground Cardamon
  • Sprinkle of Sesame Seeds (to serve)
  • Drizzle of Maple Syrup (to serve)

Method:
  • Add the Polenta, Water, Milk and Ground Cardamon to a small saucepan over a medium heat and cook for three minutes. You'll need to stir it continuously to prevent it from sticking.
  • Check the consistency and add more water or milk if desired. Transfer to a bowl, sprinkle over the Sesame Seeds and finish it off with a generous drizzle of Maple Syrup. Enjoy!

Pizza is one of my all-time favourite foods - I could honestly eat it every day! However, it's usually pretty calorific, so if you're looking for a much healthier version to make at home that's also gluten-free, why not try this Quinoa Pizza for a change?

The supermarkets are full of ready-made, gluten-free pizza bases these days, but if you check the label, you might be shocked to find a bunch of hidden sugars, excess salt and artificial preservatives, so what's a gal to do? Make your own of course! 

Thankfully, there are lots of healthy, gluten-free pizza recipes online and I've been trying out various ones over the past couple of months with differing results. The best by far has been Deliciously Ella's Quinoa Pizza recipe from her self-titled debut cookbook, and it's a fun way to try something new with quinoa!

Quinoa is a brilliant pseudocereal that's naturally gluten-free, and unlike most other plant-based foods, it contains all nine of the essential amino acids which makes it an excellent source of complete protein for vegetarians and vegans. If you've only eaten quinoa in salads or as a side before, you must try this pizza recipe! It only contains five ingredients and is ready in under 20 minutes.

Ingredients:- (makes one 20cm size pizza):-

  • 195g Quinoa (the plain white colour)
  • 1 tsp Apple Cider Vinegar
  • 2 tsp of Herbs de Provence
  • Olive Oil (for greasing)
  • Pinch of Sea Salt
  • Sprinkling of Chili Flakes (optional)
  • Your favourite Pizza Toppings


Method:-
  • Prep the night before: Place the Quinoa in a large bowl, pour over cold water, making sure that it's properly covered by a good few centimetres, and leave to soak overnight.
  • Preheat the oven to 210C / fan 190C.
  • Drain any excess water from the Quinoa and then transfer to a food processor. Add the Apple Cider Vinegar, Herbs de Provence, Salt and Chili Flakes if using. Blend for a couple of minutes until you have you something that looks like a greyish pancake mix.
  • Grease a 20cm cake tin with Olive Oil and pour the mixture in, smoothing it out, and bake for around 15 minutes or until the pizza base is firm. 
  • Remove from the cake tin, transfer to a baking tray and add your Toppings. Pop back into the oven for a few minutes. Cut into slices and enjoy!


Cooking tip: For a crispier base, try cooking the pizza on a terracotta pizza stone in the oven. If you're a pizza fiend, it's definitely worth the one-off investment!

Beetroot & Quinoa Burgers (Vegetarian/Gluten-Free recipe)
Bored of traditional Veggie Burgers? Can't stomach another Portobello Mushroom in a bun? Try these tasty Beetroot & Quinoa Burgers instead! 

The humble Beetroot seems to be making something a comeback in its pure, raw and unpickled form. I've seen countless Instagram snaps of beautiful salads featuring a smattering of freshly shredded raw beetroot, and I've seen even more people using it as a key ingredient in many Summer meal recipes. I like raw beetroot, but I love it more when it's lightly cooked as it takes the edge off the sometimes overwhelming and distinctive earthy flavour that this vegetable has.

I recently tried out a couple of Beetroot burgers from the supermarket (they've been popping up everywhere in the chilled vegetarian sections) and whilst some brands have been better than others, I've been a bit disappointed with them flavour wise. So I decided to try and make my own!

This took a little trial and error with a couple of recipes, but I finally found one that I absolutely loved and I just had to share it on here. It's from the cookbook, Cook Yourself Young: Harnessing The Power of Food by Elizabeth Peyton-Jones, and these burgers are oh-so good when you fancy something different. The extra Quinoa in the mixture makes them really substantial and filling, and you can enjoy these in traditional seeded Burger Buns with some Sweet Potato Fries on the side, or have them as the star attraction of a large mixed Salad for a lighter lunch option.

Beetroot & Quinoa Burgers (Vegetarian/Gluten-Free recipe)
Ingredients (makes 4 burgers):-
  • 2 medium sized uncooked, raw Beetroots
  • 1 large Carrot
  • 110g Quinoa
  • 1 Onion, finely chopped
  • 2 free-range, organic Eggs, lightly beaten
  • 100g Buckwheat Flour
  • 1/2 tsp Fennel Seeds
  • 1tsp Coconut Oil
  • 4 Burger Buns (to serve)
  • Mixed Salad & your favourite Sauces (to serve)

Method:-
  1. Cook the Quinoa according to your packet instructions, drain and allow to cool.
  2. Peel the Beetroots and Carrot, and then grate them into a large bowl.
  3. Add to the bowl the Quinoa, Onion, Eggs, Buckwheat Flour and Fennel Seeds, and mix everything together well.
  4. Place a large frying pan over a medium heat and add the Coconut Oil.
  5. Using your hands, shape four burger patties from your bowl mixture (they should feel a bit sticky and hold together well).
  6. Place the burger patties in the frying pan and lightly fry for a couple of minutes on each side until they're hot throughout and crispy on the outside, making sure to turn them over halfway through.
  7. Add to Burger Buns with your favourite sauces or serve with a large Mixed Salad - enjoy!
