If your Christmas shopping list involves buying gifts which are practical, thought-provoking and useful in some way, this short but sweet alternative edit is here to give you a couple of ideas!

Whilst many of us have already got the memo about ditching single-use plastic drinks cups and bottles, there are still some people who haven't gotten around to buying an alternative yet. Fret not! You can give them a helping hand in the right direction by gifting them their very own reusable coffee cup or bottle, and help save millions of tons of unnecessary single-use waste from going to landfill every year. Loads of shops sell them on the high street, supermarkets stock them, and I even found them by the till recently at my local petrol station, so they're super easy to find and pick up.

There are lots of book subscription boxes out there, but one that I've been particularly taken with recently is a newbie called Heady Mix. I've seen a recent trend on social media of parents shunning the typical plastic consumer 'tat' that are marketed at their kids, and instead, making them a Christmas stocking which is full of useful products to help kickstart family conversations about the importance of protecting the environment. With so many young kids being more aware of the problems that the world is facing these days thanks to movements like Extinction Rebellion and programmes such as Blue Planet, I think it's a pretty cool idea!

One item that you can include in their stocking is the much-loved bamboo toothbrush. This sustainable, biodegradable, plastic-free alternative helps to represent how easy it is to change daily habits with just one product. And again, this is an easy item to shop for on the high street or online.

Matcha Green Tea & Lemon Muffins (Dairy-Free / Vegetarian / Gluten-Free recipe)
Matcha is a surprisingly versatile superfood ingredient to have in your cupboard and if you're a fan of the green stuff, these Matcha Green Tea & Lemon Breakfast Muffins are a healthy snack to enjoy first thing in the morning or to beat that dreaded afternoon slump.

I am partial to a good Matcha Latte (check out how to make one here), but after browsing some of my cookbooks, I decided to try it in baking for the first time last month and I loved the results! Since then, I've experimented with a couple of different recipes and have been enjoying these delicious Breakfast Muffins so much that I wanted to share it on here for Foodie Friday.

This recipe is taken from The Gut Health Diet Plan by Christine Bailey which is well worth checking out if you're interested in how you can improve your gut health. Dairy-free, gluten-free, grain-free and vegetarian-friendly, these muffins are packed full of anti-inflammatory antioxidants thanks to their Matcha content. They also contain a source of the amino acid L-theanine which has been shown to relieve minor symptoms of anxiety and help the body cope with daily stress so these are perfect if you have a busy commute to work or Uni!

Tip: If you want to make these muffins vegan, simply swap the eggs for some mashed banana or try an egg replacement product like Follow Your Heart Vegan Egg.

Matcha Green Tea & Lemon Muffins (Dairy-Free / Vegetarian / Gluten-Free recipe)
Ingredients (makes 8 muffins)
  • 200g Ground Almonds
  • 30g Coconut Flour
  • 1/2 tsp Bicarbonate of Soda
  • 1 tsp gluten-free Baking Powder
  • 60g Xylitol or Coconut Sugar
  • Zest & Juice of 2 Lemons
  • 1tbsp Matcha Green Tea powder
  • 60ml Almond or Coconut Milk
  • 4 organic, free-range Eggs, beaten
  • 2tbsp Coconut Oil, melted
  • 1tsp Vanilla Extract
  • 1 tbsp Chia Seeds
  • Flaked Almonds (optional topping)
  • Pinch of Sea Salt

Method
  • Preheat the oven to 180C / Gas Mark 4. Line an 8-cup muffin pan and set aside.
  • In a large bowl, combine the Ground Almonds, Coconut Flour, Salt, Bicarbonate of Soda, Baking Powder, Sugar, Lemon Zest and Matcha, gently mixing everything together.
  • Slowly stir in the Lemon Juice and Milk, then add the rest of the wet ingredients; Eggs, Coconut Oil and Vanilla Extract. Stir until smooth.
  • Leave the mixture to stand for 5 minutes, then stir in the Chia Seeds.
  • Divide the batter into the muffin cases and add a few Flaked Almonds on top if using.
  • Bake for 25-30 minutes until golden and firm to the touch. Leave to cool for 5 minutes before turning out on a wire rack to cool completely. Enjoy!

If you're a healthy chocolate fan, you probably already have a jar of Carob Powder in your cupboard. Similar to Cacao, Carob Powder has a sweet, but milder chocolate-like flavour. It's derived from the Carob Tree where raw, unroasted beans are left to dry and ferment naturally in the tropical sun, before being ground down into a fine powder. This one from KIKI Health is 100% organic, high in dietary fibre and can be used in virtually the same way as Cacao. I like stirring a spoonful into porridge, sprinkling a little over Kefir or Skyr yoghurts, making hot chocolate, and it's brilliant in baking too as a substitute for cocoa powder if you want a chocolate flavour without the sugar!

Matcha is something of an acquired taste, but if your tastebuds like it, a Matcha Latte is a great way to start your day. This now trendy healthy drink has been enjoyed in Japan for centuries and its benefits range from boosting the metabolism and improving your concentration, to clearing up minor skin problems and helping to keep blood sugar levels stable. Rich in antioxidants and essential vitamins and minerals such as Vitamin C, Zinc, Magnesium and Selenium, it's easy to see why Matcha is so popular.
